We all know we should be eating five portions of fruit and veg a day, yet many of us struggle to include them regularly in our diet. Vegetables in particular are incredibly good for us, packed full of micronutrients, phytonutrients and fibre, which are essential to nourish our bodies.

If we don’t eat enough fibre (30g per day) then our gut won’t function properly, which can lead to a variety of health problems. What’s more, the ‘happy hormone’ serotonin is produced in our gut, so vegetables really are as good for the body as they are the mind!

Contrary to what people think, eating healthily doesn’t have to be expensive, boring or time-consuming, as nutritionist Sarah Ann Macklin shows us in her nutritious and delicious recipes - Move over soggy broccoli and mushy carrots, it’s time to let the veg shine.
